Tasting Note 

The Beltana is produced using 100% Chardonnay grapes selected from the cool south-facing slopes high in the Adelaide Hills. Ageing for five years on lees adds complex nut and toasty hints to the fresh citrus and green apple aromas. The palate is long and full, yet with the signature Deviation Road crisp, mouth-watering finish. A persistent fine bead and creamy mousse gives extra lift to these delicious aromas and flavours. 

Winemaking 

Each parcel was handpicked and whole bunch pressed separately into tank for settling. Fermentation of these small batches lasted around 12 days and the wines in 2009 all went through malo-lactic ferment over winter to soften the acidity. Careful blending of the base wines was carried out in early spring before tirage (bottling). 

After a minimum of 5 years ageing on lees, each bottle has been riddled and hand disgorged on site in our Longwood winery. Small batches are disgorged at a time to allow the remaining bottles to continue ageing on lees as long as possible. The dosage liquor added at disgorging is crafted using a blend of base wines and is then aged for a minimum of 12 months. 

Vineyard 

Located high (550m) in the Lenswood district of the Adelaide Hills on Deviation Road, this 25 year old vineyard consistently produces outstanding Chardonnay for sparkling wine.

 Tasting Note 

60% Pinot Noir, 40% Chardonnay. Loftia is famously crisp and zesty, the perfect aperitif style sparkling. Aromas of baked red apple and lemon crème brulée on the nose precede the creamy mousse and citrus finish. 

Winemaking 

Different parcels of fruit are all hand-picked and then fermented in stainless steel tanks. In 2016 partial Malolactic ferment took place to soften the palate and add complexity while retaining the perfect natural acidity in the blend. Tirage (bottling) happened in late winter of 2016 before leaving the bottles to develop with time on lees in the cool, dark cellars. 

Each bottle is riddled and disgorged on site in our Longwood winery. The dosage liquor added at disgorging to add the finishing sweetening element is crafted using a blend of base wines and is then aged for a minimum of 12 months. 

Vineyard 

We source fruit from sites located above 550m in the Lenswood and Piccadilly Valley regions of the Adelaide Hills. These sites consistently produce outstanding Pinot and Chardonnay for sparkling wine.

Blend Details
This is a blend of various vintages. The base is made from Shiraz wines from 1995 – 2012 vintages. These wines have been used like a solera system with a portion of the older material used in the blend to give the wine depth and wonderful richness on the palate. This base has then been blended with Shiraz from the 2015 and 2016 vintages to add lift, palate weight and richness.

NV Shiraz Base
To increase the complexity of this sparkling shiraz a base wine blend is kept from vintages as far back as 1996. This base is stored in old oak hogsheads on a bed of Chenin Blanc yeast lees to aid mouth-feel.

Characteristics
Colour : Very deep, rich crimson in colour with crimson hue.
Nose : Notes of blackberry and cherry fruits, spice box and a little pepper
Palate : Dark fruits carry through onto the rich, velvety, long and slightly sweet but not cloying palate.

Winemaker’s Comments
This is a quintessential Australian Sparkling Red wine. It is rich, dark and dangerously delicious. Should be consumed cold, with good company, good food, good music and good cheer. Lovely wine to drink as an aperitif, or with roasted duck, goose, chicken or pork or at the close of a meal with dark fruit cake and a good cheddar type cheese. While rich, the wine is never cloying, finishing with vibrant acidity and some lovely drying tannins to offset the semi-sweetness of the wine. Blue and black fruits with spicy notes, long full palate, some initial sweetness on the long palate finishing with a refreshing crispness. Drink well-chilled.

Food Match
Duck and pistachio terrine, roasted goose, turkey or duck, spicy beef ribs.

Ageing Potential
Though rich, complex and delicious to drink now, if cellared carefully we expect the Moxie Sparkling Shiraz will drink gracefully for 8-10 years.

An icily refreshing showcase of pristine, cool-climate fruit with incredible elegance and persistence. In our Shiraz vineyard lives the Golden Orb spider. During the summer they catch vineyard pests, which is one reason why we haven’t used pesticides in the vineyard for over ten years.

Tasting notes
Aged in French oak barrel’s for 2 years, this is a elegant cool climate shiraz, that will age well until 2025. Our aim is to make a complex sparkling shiraz, so some years it will be a straight vintage, and others a blend; which ever gives us the very best results. The oak age has given some nice Christmas cake complexity, but still with fresh blackcurrants and licorice. Balanced acidity means it doesn’t look acidic (or tart) when ice cold, and with just a touch of residual sugar means it won’t taste sweet if it warms up in the glass.

It took until 2012 for the vintage to be considered Emerson worthy (and wasn’t released until 2016). Emerson is made using the traditional sparkling wine method – whole-bunch cold pressed and hand-plunged, then bottle fermented for four years on the lees. One word sums it up… Amazing.

Colour
Light, watery golden appearance with greenish tints.

Aroma
Lightly aromatic nose of white fruits.

Palate
Typical of early picked chardonnay with extremely elegant white fruit flavours, wonderful small bead and leaving a clean acidic taste in the mouth.

Cellaring
The low pH and wonderful balance of the wine means it will last for 10 – 20 years, gaining in complexity as it ages.

Vintage 
Vintages continued to get earlier and we picked the chardonnay in mid-February – our earliest start so far. The weather was excellent and the fruit was sound.

Vinification
The base wine was whole bunch pressed and after 48 hours cold settling it was racked to a stainless-steel tank where it underwent its primary and malo-lactic fermentations. After protein (Bentonite) and cold stabilization, the base wine was transferred to the Lodestone winery, where Michael Sykes undertook the traditional champagne approach of a secondary fermentation in each bottle. At disgorgement 7.5 g/L of sugar was added.

General Comments 

As of November 2018 this wine has had three separate disgorgements, the last in February 2018. It is an excellent aperitif and as some commentators think small bubbles a sign of quality, this is a very high-quality champagne style of wine, indeed as the bubbles are tiny. In blind tastings, it compares very favourably with non-aldehydic styles of champagne, such as Pol Roger.

5,300 bottles produced. Hand picked, whole bunch pressed and natural cold settling for 10 days then racked with little solids for natural ferment at 12c for 4 weeks with lees aging for a further 4 weeks for added texture, roundness and complexity. Final base wine completion was transferred to tank for pressurised secondary fermentation to produce its natural occuring fine bubbly beads (Prosecco’s traditional Martinotti / Charmat method)

Wine Making
Beautifully frothy and bright with a greenish streak with an excellent persistent bead. Aromatically appley with stone fruits, lime and orchard blossom flowers. Wonderfully bright & dry, fresh, soft & rounded, with excellent acidity, texture, weight & persistence.
