Simon Tolley Chardonnay 2016 (RRP $35)
WINEMAKING
Hand picked grapes were gently whole pressed to seasoned French oak barrels using free-run juice only. A high solids, wild fermentation followed, giving the wine texture and complexity. The wine then underwent Malo-lactic fermentation with weekly batonage (stirring) for 6 months before bottling.
Simon Tolley Sauvignon Blanc (RRP $25)
WINEMAKING
Grapes were crushed and de-stemmed before gentle air bag pressing, taking the free-run juice fraction only. After cold settling for 48 hrs, the juice was inoculated with carefully selected yeast. A long, slow and cool fermentation followed before fining, filtering and bottling.
Simon Tolley Syrah 2016 (RRP $35)
WINEMAKING
The fruit was fermented over a 12 days and held on skins post ferment for 7 days. After light pressing the wine was racked to small French oak barrels and matured for 2 years. Bottled August 2018.

A small parcel of carefully tended vines of Chardonnay fruit was harvested from the Tolley Vineyard in Woodside in March 2022.

At Simon Tolley Wines we are firm believers that great wine is made in the
vineyard. To this end no stone is unturned to grow the best quality fruit we can on our family vineyard at Woodside in the Adelaide Hills. To grow the best fruit, you need to select not only the right site but also the right clone to deliver the results that you want to achieve in the finished wine. For Rosé, we have chosen MV6. This is one of the most highly rated Pinot Noir clones and was first registered in Australia in 1974. Small berries and bunches, rarely over-crops, later ripening. This clone is noted for excellent colour, dense, full bodied wines. A versatile clone particularly for rosé but also for sparkling and table wines.
HARVEST
A small parcel of carefully selected Pinot Noir fruit was harvested from our
Woodside Vineyard in the Adelaide Hills on the 28th March 2018.
WINEMAKING
Grapes were de-stemmed in the vineyard in the cool of the night. Within 1 hour of harvest, whole berries were transferred to the press and lightly compressed. Juice was left to soak on skins for 4hrs in press to pick up light, bright colour only. Using free run fraction only, the juice was transferred to stainless steel for cold settling for 48 hrs. After settling, the juice was racked, taking clear juice, then fermented slow & cool in stainless steel over 14 days. The juice was fermented to only 4.5g/L of natural sugar to balance acidity, then fined, filtered and botled fresh.

HARVEST
Grapes were selected from low yielding vines growing on the higher
slopes of our estate.
WINEMAKING
Approximately 20% handpicked and harvested at 14.2 Baume. Open rollers used at crushing to maximize percentage of whole berries. Approximately 50% fermented in a Potter fermenter and 50% in an open fermenter. The fruit was 5 day’s cold soaked at 2-5°C to increase colour vibrancy and maintain fruit freshness. The juice was allowed to warm up on its own with natural yeasts starting fermentation, additional yeast added at 6 Baume. Extended skin contact post fermentation (50% 2 weeks in potter & 50% 4 weeks in open fermenter) for additional tannin extraction, integration & palate softening. Transferred to oak for malolactic fermentation – 20% new French oak and balance into 2-3 year old French hogsheads.
CHARACTER
Mixed red & black berry aromas with strong varietal character. A mouth filling, well balanced medium to full bodied palate, well-structured with soft, silky tannins.
