Sourced exclusively from our Uley vineyard, a single clone (D5V12) of Pinot Noir grapes was hand harvested on March 16 at a Baumé of 13.4 degrees, pH 3.43 and titratable acid of 6.5 g/litre.
After crushing and 48 hours of skin contact, the must was drained and gently pressed to tank for cooling and settling prior to yeast inoculation 8 days later. A slow, cool fermentation was conducted to allow preservation of primary and fermentationderived fruit characters. Bottled July 5 2018.
Pastel pink in colour, the aromas and flavours are those of strawberries, pink grapefruit, rose petals and Turkish delight. The palate is dry, finishing with lingering fruit flavours and crisp citrusy acidity. Excellent as a refreshing aperitif or complimentary to most Asian–style dishes.
This Montepulciano Rosé was Seletiv Harvested in March from the Amadio vineyard in the Northern Adelaide Hills. It was left on skins to develop a pale colour and then pressed to large format French oak. I was wild fermented and left in barrel for 7 months to develop texture and depth.
This one is for all the loyal Rosé drinkers out there; the ones who have always drunk it regardless of fashion. This wine was made with intent – not just a by-product or an after thought. Montepulciano grapes from the northern reaches of the Adelaide Hills were destemmed, gently pressed to barrel and left to begin a slow, wild ferment. A further 5 months in oak to develop intensity has resulted in a luscious strawberries and cream palate that’s just begging to be the life of the party. Grab it now before GB drinks the lot.

ROSÉ was once a sweet, coloured white wine - now it’s a legitimate style of its own. Lovingly crafted from REAL ROSÉ VARIETIES. Not Your Grandma’s Rosé is made as a true rosé (picked earlier than typical red wine). 62% of the blend is old vine Grenache from the Lyndoch foothills and from Stockwell, which is co-fermented with 30% of old vine Mourvèdre also from the Lyndoch region. The remaining 8% is an aromatic blend of Riesling, Gewürtztraminer, and Weißer Herold from the Northern Eden Valley, which emphasises the strawberry, musk and turkish delight aromas. Not just for summer!
Enjoy with all foods, from Spencer Gulf prawns to Saskia Beer poultry and charcuterie. Early picking allows for a textural mouthfeel, luminous rose-diamond colour and crisp natural acidity giving great length. Grenache contributes the red berry and strawberry palate with Mourvèdre adding structure and lingering spice.

This wine is made from a blend of Pinot Noir for its power and riper red fruit aromas and Chardonnay for citrus lift and finesse. We select the fruit from the cool south-facing slopes high in the Adelaide Hills. Sweet strawberry, cherry and spice aromas follow through to the palate, where the lively bubbles add lift and balance to these fruit flavours. This wine has wonderful length and supple mouth feel.
The fruit is all hand-picked and whole bunch pressed into tank for fermentation. A remaining parcel of Pinot Noir is fermented as red wine in open top fermenters with daily plunging. Fermentation lasts around 12 days and the wines go through malo-lactic ferment over winter to soften the acids. Blending then takes place, combining the clear base wine with around 4-7% of the red wine to achieve the pale pink colour and fruit lift that is signature of this wine. We tirage the wine by hand and store the bottles at 14` for a long consistent second ferment. Each bottle is riddled and hand disgorged on site in our Longwood winery. Small batches are disgorged at a time to allow the remaining bottles to continue ageing on lees as long as possible. The dosage liquor is crafted using a blend of base wines that have been aged for at least 12 months.
We source fruit from vineyards located high in the Lenswood district of the Adelaide Hills, where the vines have an average age of 25 years. These sites consistently produce outstanding Pinot Noir and Chardonnay for sparkling wine.

Rosé - Grenache / Vermentino
Made from 87% Grenache from 54-year-old vines and 13% Vermentino, this unique provencal inspired Rosé is dry, fresh & crisp with exceptional depth of flavour and vibrant acidity.
Colour: Blush pink with a rose gold hue
Nose: A lifted bouquet of vibrant fruits, consisting of strawberries, tangerine, pink grape fruit and orange peel.
Palate: The palate; dry, long and fine, revealing lovely citrus fruits; pink grapefruit, and tangerine. Combined with strawberries and raspberry adding fruit sweetness. Finishing with a lovely acid line delicately balanced with a slight phenolic grip from the Vermentino.

The NGERINGA Rosé is made with Syrah from our three vineyards: Summit, Rufus and Iluma. The Summit vineyard is planted on an easterly facing slope at 380m above sea level on a soil of sandy loam over clay and with Lake Alexandrina as its backdrop. The Rufus vineyard, by contrast, is westerly facing on the opposing side of the hill with a rocky, red ironstone soil over clay. The Iluma vineyard, also on a westerly facing slope, is of a sparkling micaceous schist over clay. All our Syrah vineyards are planted at a density of 6700 vines/ha.
Fermented in 100% old, seasoned French barrels. Aged for nine months in barrel on full lees.
Wild fermentation, no enzymes, spontaneous malolactic fermentation, gentle extraction, warmer fermentation, minimal temperature control. No fining. Estate bottled. Small amounts of sulphites added before bottling.
Vintage 2017 was notable for a variety of reasons. Having kicked off the season back in early spring with an early bud burst, cooler and considerably wetter conditions set in, slowing down vine flowering. Wet soils through spring and early summer, including a storm of cataclysmic proportions in late December, combined with cool nights right through January, culminated in an uncommonly slow, late veraison - the stage when grapes begin to sweeten and take on colour. Despite the wet weather, we managed to avoid the worst of the common fungal pitfalls through vigilance and persistence in the vineyards. By February and March, warmer, dryer days finally prevailed allowing for a long, slow ripening period and a comparatively late harvest. During this final phase, the grapes achieved excellent phenological ripeness with structured tannins and ripe flavours. The sum total of the conditions were ultimately perfect for our preferred style of winegrowing, yielding wines that are elegant and refined but with fully ripe, balanced characters. The wines from the 2017 vintage will be ones to watch.
At Simon Tolley Wines we are firm believers that great wine is made in the
vineyard. To this end no stone is unturned to grow the best quality fruit we can on
our family vineyard at Woodside in the Adelaide Hills. To grow the best fruit, you
need to select not only the right site but also the right clone to deliver the results
that you want to achieve in the finished wine. For Rosé, we have chosen MV6. This
is one of the most highly rated Pinot Noir clones and was firstr egistered in
Australia in 1974. Small berries and bunches, rarely over-crops, later ripening.
This clone is noted for excellent colour, dense, full bodied wines. A versatile clone
particularly for rosé but also for sparkling and table wines.
A small parcel of carefully selected Pinot Noir fruit was harvested from our
Woodside Vineyard in the Adelaide Hills on the 28th March 2018.
Grapes were de-stemmed in the vineyard in the cool of the night. Within 1 hour of
harvest, whole berries were transferred to the press and lightly compressed. Juice
was left to soak on skins for 4hrs in press to pick up light, bright colour only. Using
free run fraction only, the juice was transferred to stainless steel for cold settling
for 48 hrs. After settling, the juice was racked, taking clear juice, then fermented
slow & cool in stainless steel over 14 days. The juice was fermented to only 4.5g/L
of natural sugar to balance acidity, then fined, filtered and botled fresh.

Fresh, lively, strawberries, lifted and full of flavour – Rose at its best. Made from Cinsault/Grenache in the saignee method of bleeding off the skins and then cool fermented to dryness.This wine is dedicated to the soul mates we have in our life – without them life would be very different.

Pale salmon in colour, this refreshingly crisp Rosé sings of beguiling red fruit aromas and refreshing watermelon and cranberry fruit flavours.
Made from Heathcote Grenache and first made in 2016, this wine is inspired by the French Provencal style of Rosé and has a dry, savoury finish.
Best enjoyed young and chilled, watch the flavours come alive with food - especially antipasti platters, cured meats and oily fish, including salmon and trout.
Rosé in this collection use a range of grape varieties including Pinot Noir, Grenache, Mourvedre and montepulciano and all are delicious.
These rosés are influenced by the European styles hence producing pale, delicate, interesting styles. Light and crisp, flavours of fresh strawberries and cherries with musk and Turkish delight. A great drink all year around, but especially when the weather warms up.

Machine picked in the early hours of the morning from a easterly facing vineyard in Kuitpo. Clone is G8V3 and block is managed in strict VSP with an elevation of 400m. The site produces wines with rich and complex while also display pure fruit characteristics.
Destemmed only and left on skins for 6 hours to extract minimal colour with no SO2 addition. Gently pressed to extract the subtle free run juice with purity of fruit. Settled for 5 days and racked when juice was clear. Fermented with a hybrid yeast strain to give complexity and richness to the wine. Ferment was run at cool temperatures and took 28 days to ferment to dryness... Aged on lees post ferment for 6 months to build texture and body in the final wine while adding a subtle complexity. Clarified and bottled early October.
Z WINE (Z for Zerk) is the creation of dynamic sisters Janelle and Kristen Zerk. With over 170 years of Barossa heritage behind them they grew up together in the Barossa Valley on a vineyard that has been in the Zerk family for five generations.
The [AVELINE] Rosé is hand-picked from 70 year old vine Grenache and soaked on skins for 22 hours before gently pressing and a cool ferment on a small amount of solids.
This wine displays fragrant aromatics of red apple, strawberry and cranberry with hints of violet. The palate is perfectly balanced with seductive red fruit and crisp acidity. Serve chilled with spicy foods and on summer days.
