Piccadilly Valley Pinot Noir is a blend of fruit from a few of the neighbours as well as a contribution from de-classified Ashton Hills Reserve/Estate parcels. Stephen George has taken great interest in applying his winemaking approach to parcels from elsewhere within the Piccadilly Valley and seeing how the wines compare with those from the Ashton Hills vineyard. The resulting blend benefits from varied fruit character and vineyard expression, while maintaining the fine tannin structure that is typical of the Ashton Hills style.

Winemaking Different parcels of fruit are all hand-picked and then fermented in stainless steel tanks. In 2018 partial Malolactic ferment took place to soften the palate and add complexity while retaining the perfect natural acidity in the blend. Tirage (bottling) happened in late winter of 2018 before leaving the bottles to develop with time on lees in the cool, dark cellars. Each bottle is riddled and disgorged on site in our Longwood winery. The dosage liquor added at disgorging to add the finishing sweetening element is crafted using a blend of base wines and is then aged for a minimum of 12 months. |

Winemaking Selected rows from several blocks within our Lenswood vineyards are chosen for their ability to deliver intense varietal character. In addition yields per vine are kept to a minimum. The fruit is hand-picked into small baskets and then undergoes a cold soak pre-ferment to enhance the extraction of colour and aromatics. After fermentation the skins are pressed out using our traditional basket press and then the wine aged in French oak barriques for 12 months. After this period, we blend our finest parcels and hand bottle onsite. |

A densely complex nose that rewards contemplation with an alluring mix of feijoa, Asian spices, and cherry cola as well as floral highlights and cedar forest undertones. Juicy on the palate, with cherry and goji berries amongst fresh herbs, sarsaparilla-root, rosemary and rhubarb. The tannin is fine and the finish lip-smacking. Very mysterious indeed.

What is it about Pinot Noir? It’s one of the most compelling but also polarising varieties. Arcana is a reference to Pinot being one of the most elusive grapes in the world. It has secrets and mysteries that have been endlessly chased by countless wine lovers. You might also say good Pinot, like arcana, is something of an elixir or remedy.
Vineyards
Woodside
The character of arcana is strongly influenced by the qualities of the Pinot clones we source from two sites in Woodside in the Adelaide Hills. Here the combination of clone and location produces a weightier Pinot with juicy, rich red fruit flavours and a complex mix of floral and spice aromas.
Carey Gully
We source a different Pinot clone from one site located in the elevated, cooler microclimate of Carey Gully in the Adelaide Hills. The grapes from this site produce wine with natural elegance and structure as well as spice and fresh herb characters.
Winemaking
The arcana is a best of vintage blend, with the 2015 coming from a selection of five barrels. All components were hand-picked and given slightly different treatments during primary ferment depending on the clone and perceived qualities of the grapes. Some components included small portions of whole bunches and were pressed early, and others were subjected to extended time on skins. Each component was basket pressed before being gravity-transferred to old French hogsheads. In some cases the lees from primary ferment was included in the barrels to enhance texture and complexity. After aging for 14 months in oak each component was assessed and blending trials were conducted to determine the proportions for the final blend. The wine was then racked to tank before bottling without fining or filtration.

Our unpretentious Pinot has a brilliantly lifted nose of satsuma, cranberry and cherry liqueur, leading to dried herbs and flowers with hints of mushroom and forest floor. The palate opens with sour cherries and fresh raspberries, followed by baked quince and feijoa with bramble-patch and potpourri in the background. It’s a super slurpy light-bodied wine with zingy acid lines and beautiful fine tannins.
Pinot Noir
Pinot is the grape variety responsible for some of the most intense wine snobbery on the planet. It’s supposed to be taken very seriously. It’s supposed to sit in the finest barrels in cellars with moody lighting for years before being released. It’s supposed to spawn expansive dialogues on the interplay of light and dark elements, brilliant bouquets harmonizing with brooding layers of earth and mushroom and ethereal, mysterious spices. But the Adelaide Hills are producing fruit with amazingly attractive characteristics right out of the gate, so we’ve put together a Pinot that’s still young, vibrant, fresh and delicious. It’s a wine that you can just drink and enjoy. This style of Pinot is becoming extremely popular, with the Adelaide Hills at the heart of the movement.
Vineyards
Piccadilly Valley
A small portion of fruit was sourced from a vineyard in the Piccadilly Valley sub-region of the Adelaide Hills growing the 777 Pinot clone. The cooler Piccadilly vineyard provided a bulwark against hot early Summer conditions, helping to preserve the heady aromatics and fresh red fruit flavours the 777 clone is renowned for.
Woodside
The majority of the fruit was sourced from a vineyard west of Woodside growing the 114/115 Pinot clone. The east-facing vineyard is well-protected from hot afternoon sun, making it ideal for growing 114/115 Pinot with its natural elegance and delicate flavours.
Winemaking
A portion of the hand-picked fruit from both vineyards was de-stemmed, crushed, and wild fermented on skins with minimal intervention for a short time before being basket pressed to old French oak. The free-run portions of these ferments were included in the final blend after 14 months maturation. A small amount of the Piccadilly fruit was kept as whole bunches and underwent a carbonic maceration ferment, producing a blending component rich in floral aromatics. A small percentage of whole bunches were included in the wild ferment of the remaining Woodside fruit to provide some extra texture and spice. This portion spent longer on skins before being pressed to old French oak for 13 months.

This Heirloom Vineyards Pinot Noir was produced from our best Adelaide Hills Vineyard whose clones and viticulture embody the very best in cutting edge but old school viticulture and winemaking. Hand tended vines, sorted bunch-by-bunch, naturally open fermented, basket-pressed and stored in well seasoned first-use French oak barriques from bespoke coopers.
The colour is of course, no indication of condition, being a Pinot Noir, but vibrant translucent ruby red with bright see through tinges. A striking and intriguing colour.
The aroma is suggestive of ripening cherries, and like a perfume made from ripening summer pudding fruits; raspberries, boysenberries, red-currants and even a hint of mint and mossy forest floor but overall this wine redolent with ripening plums and black cherry smells and the merest hint of enticing cedar and spice. An extraordinary range of aromatics like waves crashing on a beach.
The palate is initially intense sweet fruit of cherries and ripe raspberries, plums and then some black cherries.This is balanced by a tangy acidity, like a summer pudding with some fresh cream and spice from the French Oak and an almost chalk-like tannin structure. A real nod to Burgundy.
An extraordinary Pinot Noir from the Adelaide Hills, from Heirloom clones of course, of whole bunches (stems and all) open fermented basket pressed, unfiltered, unfined and hand-bottled from a single site of free draining quartz laden north-facing vines that cannot be poached by describing their location on this note. We think this wine will cellar well but is so delicious now any argument for delayed gratification is almost academic.

According to J. Gladstone the Biological Effective Degree Days (BEDD) – where you add all the temperatures of the growing season together – of the top sub region of Burgundy is 1242. Mount Gambier’s BEDD is 1245, making it the closest to - the most famous French Pinot Noir region - Burgundy that we have in Australia. Est. 1883, the Cape Banks Lighthouse is a significant orange monument standing as a sentinel on South Australia’s rugged South East coastline. The lighthouse’s powerful lamps shine shafts of warning light across the wild Southern Ocean, offering protection for passing vessels from treacherous hidden reefs.

General Comments
An intensely flavoured pinot noir and certainly fulfils our mantra of ‘power without weight’. We have bottled half of it using diam corks and half under screw cap. It will be an interesting exercise to watch the development of the wine under the differing closure.

Harvested from 810 from the top of our Pinot Noir block, clones Burg 80a, 0014 & 140a. Light garnet in colour, very aromatic with light berry flavours, a little sweetness mid palate with flavours of marzipan and Turkish delight. The use of 25% new French oak (10 months) perfectly balances the fruit and soft tannins. Harvested in late March and limited to less than 100 dozen.

In the distance, this vineyard overlooks Lake Alexandrina and the Murray mouth, consequently receiving cooling evening breezes which do much to preserve our fruit acids and flavours through the critical weeks of ripening.
Winemaking
15% whole-bunch pressed. Gentle plunging daily. 3-4 weeks on skins. Matured in 25% new French barriques. Bottled after 12 months.
Wild fermentation, no enzymes, spontaneous malolactic fermentation, gentle extraction, warmer fermentation, minimal temperature control. No fining. Estate bottled. Small amounts of sulphites added before bottling.
Vintage
2016 was a dry, hot vintage from the outset with only periodic respite. Promising rains in July and August of 2015 gave way quickly to an extremely dry spring and above-average temperatures, with essentially none of the seasonal rains we rely upon from October through much of January. On the bright side, despite conditions at flowering, we had a better-than-ever fruit set that was consistent across all varieties. And then, just as vintage was becoming visible on the horizon, the miracle came: a perfectly-timed, drenching rainstorm hit South Australia on January 21 & 22, refreshing the vines in a way irrigation just cannot match. A second significant rain event in the first few days of February ensured that the vintage was saved. The harvest was very early, beginning in the middle of February, but not nearly as early as it would have been and the fruit was thoroughly revived. The result was higher-than-average yields, good acidity, moderate concentration and balanced, approachable wines. Winegrowing is rarely for the feint of heart!

Vintage
The abiding climatic feature of note at the start of the 2018/19 season was rain: the Adelaide Hills recorded its largest annual rainfall in a quarter of a century – meaning the largest our vineyards have ever seen. Notably, a third of that rain fell in July and September, saturating soils as the vines for the start of the growing season*. The result of this moisture, along with usually low temperatures, was late budburst and flowering. High levels of soil moisture and continuing rains through spring meant that our vines needed no further irrigation. Dense leaf canopies increased disease pressure for many in our region, but our biodynamically-managed vineyards remained healthy, vibrant and largely pest free, carrying a good crop to harvest. We began picking with our happy band of French vineyard hands about three weeks later than usual, but that long, slower-than-usual development created fine ripe tannins, good concentration and loads of flavour across all of our varieties. In sum, 2019 was a dream vintage in many respects: terrific quantity, excellent quality and an extended harvest.

The Wine
Floral edges with cuts of bright red berries combine on the nose of the 2018 Dagger Pinot Noir to create a fresh yet complex attack on the senses. Lifted rich fruit and spice parry along the palate to a finish of fine-grained tannin and bright acidity The Dagger has been honed to create a vibrant, rich, earlier drinking wine displaying all of the hallmark aromas, flavours and texture of Pinot Noir. Drink young while the edge is keen.
Viticulture
The grapes for the Dagger Pinot Noir are from two carefully selected vineyard sites at Charleston and Gumeracha in the Adelaide Hills. As usual growers were requested to leaf pluck the morning (eastern side) of the Pinot vines soon after fruit set to give the optimum fruit exposure and aid the development of colour, tannins and ripe flavours.
Winemaking
Harvested in the cool of night and early morning pristine destemmed fruit is tipped directly into fermenters without crushing to give a high percentage of whole berries. The fermenters are gently pumped over twice a day to keep the skins wet and promote gentle tannin extraction. After pressing the wine is kept in stainless steel tanks prior to blending to preserve freshness and vibrancy.

The Wine
Power with finesse. The Sabre Pinot Noir layers cuts of dark cherry and forest berries with subtle spice notes on the nose. Rich fruit and floral lift lead to a finale of lingering gossamer tannins with nuances of toasty oak.
Viticulture
The grapes for The Sabre are from some of the oldest and best sited Pinot Noir vineyards in the high cool climate Lenswood and Piccadilly sub-regions of the Adelaide Hills. We work with our growers to produce moderate yields of fruit, well exposed to sunlight to maximise colour and ripe flavours. Picking dates were from 27th February to 10th March. As usual growers were requested to leaf pluck the morning (eastern side) of the Pinot vines soon after fruit set to give the optimum fruit exposure and aid the development of colour, tannins and ripe flavours. Again the newer clones (777, 114 and 115) ripened first, reinforcing our belief that they are best suited to the coolest sites.
Winemaking
A multi vineyard and multi clonal wine. Made in small batches, all cold soaked and hand plunged in open fermenters. 100% malolactic fermentation and aged in French oak barriques (25% new) for ten months prior to blending. Bottled after minimal filtration.

At Simon Tolley Wines we are firm believers that great wine is made in the
vineyard. To this end no stone is unturned to grow the best quality fruit we can on our family vineyard at Woodside in the Adelaide Hills. To grow the best fruit, you need to select not only the right site but also the right clone to deliver the results that you want to achieve in the finished wine. For Rosé, we have chosen MV6. This is one of the most highly rated Pinot Noir clones and was first registered in Australia in 1974. Small berries and bunches, rarely over-crops, later ripening. This clone is noted for excellent colour, dense, full bodied wines. A versatile clone particularly for rosé but also for sparkling and table wines.
HARVEST
A small parcel of carefully selected Pinot Noir fruit was harvested from our
Woodside Vineyard in the Adelaide Hills on the 28th March 2018.
WINEMAKING
Grapes were de-stemmed in the vineyard in the cool of the night. Within 1 hour of harvest, whole berries were transferred to the press and lightly compressed. Juice was left to soak on skins for 4hrs in press to pick up light, bright colour only. Using free run fraction only, the juice was transferred to stainless steel for cold settling for 48 hrs. After settling, the juice was racked, taking clear juice, then fermented slow & cool in stainless steel over 14 days. The juice was fermented to only 4.5g/L of natural sugar to balance acidity, then fined, filtered and botled fresh.
