A well rounded medium bodied wine, with nicely balanced tannins and a lingering finish.
This wine is made from select parcels of fruit from blocks four, five and six. Picked slightly earlier than average, the Cabernet Sauvignon had a Baume of 14.3, and the Merlot 14.7.
The wine has been aged for twelve months in a combination of French and Russian barriques.
This wine can be enjoyed now and will continue to develop in the bottle for many years.

2016 Vintage
In a word, the 2016 growing season was dry! Rainfall was well below average through winter and spring and like 2015 there were many late season frosts – indeed at Avon Brae we had our latest frost in living memory on 12 December 2015. Again, like the two previous vintages, the region was devastated by a catastrophic bushfire – this time the Pinery fire burned 86,000 hectares of farming land adjacent to the Barossa from 25 November to 2 December and again the Eden Valley thankfully escaped unscathed which allowed us to lend a hand to our relatives at Freeling. December and early January were warm, but rains at the end of January and early March were god sent and along with milder weather we eventually realised ideal ripening conditions leading up to vintage.
Harvest started early with some of the Riesling on 26 February and this year the Grüner Veltliner was late, coinciding with the last of the reds coming off in early April. The yields were above average for the whites and below average for the reds, but high quality across all varieties. It seems that the Eden Valley is able to handle almost anything that nature throws it way, and still come out on top!
2016 was a cracking vintage in pace, yield, and above all quality and is likely to surpass the 2002 vintage in greatness.

The 2016 Eden Hall Springton Cabernet Sauvignon is deep crimson-red, with liquorice and mint on the nose. The palate is filled with ripe rich black fruit finishing with mouth-filling dusty tannins. An approachable drink-now interpretation of the noble Cabernet Sauvignon.

This Heirloom Vineyards Cabernet was produced from a remarkable Coonawarra Cabernet Vineyard whose clones and viticulture embody the very best in cutting edge but old school viticulture and winemaking. Hand tended vines, sorted bunch-by-bunch, naturally open fermented, basket pressed and stored in French oak barriques from bespoke coopers.
The colour is remarkably vibrant, a bright crimson purple that reflects the 2 years in oak. A core darkness indicates the wine's ripeness and concentration.
It has a classic lift of essential Cabernet fruit aromas, a perfume of dark mulberries with a lift of white mulberries, tayberries and bramble-berries that have been baked with a fresh pie crust. A great heady aroma with rich red ripe fruits but also some hints of crushed violets and whiffs of mushrooms, olives, dried herbs and suggestions of briar and undergrowth wisping in and out. There is also a shot of old school glossy tri-coloured boiled sweets character to this most complex Coonawarra Cabernet. Two years in oak has allowed a meshing of some spice and cedar oak maturation to complex.
The palate is in a word, powerful. Also 3 dimensional. Although serious dark fruits, almost Bordeaux like on the nose, it reveals Super Tuscan type flavours on the palate. Once full-bodied and tannic, now medium bodied, supple and flavoursome. Blackcurrant is dominant but more mulberry fruit on entry, gently fleshy and with elegant and appealing tannin backbone. Good acidity too to balance the generous textural palate with flavours of plum, berry and hints of spearmint chocolate to make a second glass, and we hope a second bottle irresistible. Will age with grace over the coming decades.
An extraordinary Single Vineyard Cabernet from Coonawarra that will cellar well but is so deliciously perfect now any argument for delayed gratification is perhaps academic.

No expense has been spared to make the best wine possible: these grapes were grown with only organic additions in the vineyard (for the past ten years), and minimal intervention, with only 4 organic sprays for the season. 2013 was a fantastic vintage in Coonawarra, this wine will age well until 2030 and beyond.

The Head Honcho was created from our 10 acre single Cabernet vineyard. This vineyard produces small bervries full of intense flavour, harvesting a tiny 1 tonne per acre. In the 2012 vintage, it had only organic additives, and no pesticides (none have been used in this vineyard for 10 years).
We aged this wine for 24 months in the finest French Oak barrels. From these, only the most complex flavours from the finest barrels were selected. This year only 3 barrels made the cut, creating only 100 cases, with only 880 bottles being released to the public.

Winemakers comments
This wine has huge colour and decanting this wine for an hour will allow you to see the true depth of flavour, but also show you that this wine is almost unique at this price, in that it will get better over 10 years.
Tiny berries went into this wine - you can tell by the deep colour. The flavour comes from the skin, so the smaller the berry, the more colour and flavour.
No residual sugar, below organic levels of sulphur, and organically grown.
This wine will age beautifully until 2030.

Tasting Notes
Classic cabernet colour – deep and dark.
Also intense is the aroma: black currant, leaf and stylish oak. Concentrated black and red berry fruits are wrapped around vibrant tannins, and supported by really smart oak integration. A hedonistic wine with a generosity of fruit that belies great depth and length. Has a big future ahead yet drinks brilliantly now with a juicy beef steak.

Tasting Notes
As soon as this wine is poured into the glass the colour is black to the core, with aromas of red/black fruits especially blackcurrants with an attractive ash note, a subtle herbal lift with cedar and char. Once on the palate this wine is full of lively red fruits and blackcurrants, chocolate and ash. The finish is long and juicy balanced by firm fine tannins.

Drink now until 2025 with careful cellaring.
Viticulture
This Cabernet sauvignon was sourced from our Estate vineyard in the Willunga area to the South of McLaren Vale on a block of deep red clay/loam with an even spread of quartz and slate shale. The vineyard is 40 years old and is trellised with two cordons approximately 600mm apart. This structure allows ensure an open canopy allowing light ingress and air movement resulting in even ripening and low disease pressure. In 2012 this block yielded just over 2.5t/acre, which we were happy with considering some blocks in the northern zone of Seaview were hit by a heavy hail storm in late 2011 losing a significant level of fruit. In saying that, the resultant wines from these blocks were still rich and long.
McLaren Vale received a much needed drink in early February and then another on the 1st March (60mm/2”). After a challenging 2011, due to rain, some growers became extremely nervous with this second rain event, but thankfully there were no negative effects seen. This second rain was just what the vines needed and the following dry mild weather helped finish this Cabernet’s ripening perfectly.
Vinification & Maturation
Fermentation was even and on average lasted roughly 9 days with a maximum temperature of 28oC. Total time on skins was 16 days. Upon pressing, the free run and pressings were blended to tank. After 24 hours, the wine was racked to 2-4 year old French barriques for 12 months, during which malolactic fermentation occurred and the wines were racked twice. Prior to bottling the batches were blended and lightly fined, but not filtered.

Wine Description
Deep crimson in colour, with vibrant aromas of blackcurrants, cloves and freshly tilled earth. A rich palate displaying complex brooding characters with a rounded robust mid palate. A wine with lovely grainy tannins, focus and refinement which will mature gracefully for many years to come.
Winemaking
This wine is from the vintage’s best Cabernet Sauvignon barrels and in 2016 produced from a single vineyard in central Eden Valley. The grapes were handpicked and 100% de-stemmed into an open top fermenter, where they remained for 20 days. Naturally fermented and hand plunged daily then pressed to a mix of new and seasoned French oak hogsheads for maturation. Matured in barrel for 20 months with no racking, before being clarified and bottled without filtration.

Wine Description
Lifted dark-cherry, blackcurrant and wild-herbs typify the aroma. The palate is rich, juicy and rounded with ripe chewy tannins, finishing with a lovely freshness. This wine is approachable now but will continue to gain complexity as it matures
Winemaking
All parcels were individually hand harvested, destemmed and fermented in small 1 and 2 tonne fermenters. A mixture of hand plunging and pumping-over cap management techniques were employed throughout the fermentation. Extended skin-maceration occurred for up to 10 days post dryness before being pressed off and matured in a mix of new and seasoned oak hogsheads. Matured on full yeast lees for 15 months prior to being assembled, naturally clarified and bottled without finings or filtration
